We can highly recommend Fellowship Afloat, while not in the London region, it's a great place to learn to sail, runs fun courses, and it's only an hour and a half away on the Essex coast. Much closer to Aldenham is Stanborough Park Watersports who also offer a range of courses. For those nearer West London Datchet Water Sailing Club could be an option.
